If I Uninstall Selling Point do I lose my Gift Cards or Store Credits?

Nope, once your Gift Card or Store Credit migration is finished the Gift Cards or Store Credits are forever in your Shopify backend. Even if you delete the app all of your Gift Cards or Store Credits stay in your backend.
